Vanilla And Chocolate Pancake Cereal
Soft, fluffy and fun to eat and the chocolate addition totally takes them to the next level. The best thing about These pancakes cereal is that they are so versatile, you can serve them with any sauce or fruit you like, here I served them with a drizzle of my homemade caramel sauce, strawberries and cocoa nibs.

Yields: 2 servings
1 cup plain flour
2 teaspoons baking powder
1 tablespoon granulated sugar
⅛ cup unsalted butter, melted
¾ cup whole milk, warm
1 large egg
1 teaspoon vanilla extract
2 tablespoons cocoa powder
In a large bowl mix together the flour, baking powder and sugar.
In a medium bowl add in the milk, melted butted, egg and vanilla extract. Using a wire whisk, whisk them together.
Make a well in the center of the dry mixture, add in the wet ingredients. Mix them together until smooth.
Divide the batter between 2 bowls, add the cocoa powder into one of them and whisk until fully combined.
Heat a large, non-stick pan over medium high heat, and grease with a little butter.
Place the vanilla and chocolate batters into 2 separate pastry bags ( alternatively, use a ziplock bag ). Cut a tiny hole in the bottom corner of the bag to pipe out the batter.
Squeeze small circles of batter onto the hot greased pan. Cook for 1 or 2 minutes, until the edges of the pancakes look dry and set. Flip with a stiff spatula to flip each pancake individually. Cook for a further minute, until the bottoms are cooked through. Repeat with the remaining batter.
Remove from the heat to a cooling rack, and serve warm with caramel sauce, strawberries and cocoa nibs or your favorite sauce or fruits.
