Green Spring Pasta

An easy pasta dinner, packed with green spring goodness, this delicious pasta is so refreshing and full of flavour thanks to the zesty garlic butter and parmesan sauce. The best part is that it is ready in just a few simple steps making it a perfect weeknight dinner.

Total Time: 30 mins

Yields: 4 servings





Ingredients: 


300g fusilli pasta or any pasta of your choice

1 tablespoon sea salt

2 Tbsp butter

2 large garlic cloves, minced (about 1 Tbsp)

½ teaspoon lemon zest

½  cup fresh or frozen peas

½  cup sliced green beans

½ cup baby broccoli 

⅓  cup grated Parmesan cheese plus extra for serving

¼ cup radish slices (optional)

Salt and pepper to taste


Method:


In a medium pot over high heat, add water and sea salt, once the water starts to boil, add the pasta and cook uncovered at a rolling boil, until cooked through but still a little firm to bite.


Reserve ½ cup of the pasta water and drain the rest.


In a large skillet, heat the butter and garlic together over medium heat  for about one minute, until fragrant.


Add the peas, beans and baby broccoli and saute until the vegetables are cooked and almost tender.


Add the past, lemon zest and parmesan, stirring well until combined.


Add the cooked pasta and toss to coat well with the sauce, season with salt and pepper to taste.
