Creamy Strawberry Porridge




If you ever thought of porridge as a boring breakfast, it’s time to change your mind. This healthy and wholesome dessert like porridge is a total treat breakfast that will absolutely brighten up your day, and the best part about it, is that it is super easy and comes together on stove-top in under 10 minutes.





Prep time: 1 min

Cook time: 9 minutes 

Yields: 2 servings



Ingredients: 


Strawberry sauce: 

½ cup hulled and sliced strawberries

1 tablespoon honey

1 teaspoon vanilla extract



Strawberry porridge:

1 cup rolled oats

2 cups whole milk

2 tablespoons honey

1 cup hulled and roughly chopped fresh strawberries

Cocoa nibs (optional)

Honey drizzle (optional) 

Fresh strawberries (optional)



Method:


Strawberry Sauce:


In a small saucepan over medium heat combine the sliced strawberries, honey and vanilla extract. Bring to a boil stirring gently with a wooden spoon. 


Reduce the heat to low and cook for further 2 minutes, until the strawberries release some syrup and are cooked through. Remove from the heat and set aside.


Strawberry Porridge:


In a medium saucepan over medium-high heat, combine oats, milk and honey. Stir constantly and bring to a boil.


Reduce the heat to low and stir in the strawberries. Simmer for 5-7 minutes, stirring constantly, until the mixture is creamy and strawberries are cooked. Remove from the heat.


Spoon into serving bowls, top with strawberry sauce, cocoa nibs, fresh strawbrries and drizzle with honey. Serve warm and enjoy.
